RECIPE OF THE MONTH

"Our very first recipe of the month is Janet Mushett’s Mum’s Date and Walnut Loaf. Janet Mushett was a founder member of Chaucer Chapter, and introduced us all to her mum’s fabulous recipe. The great thing about it is that you just put all the ingredients in the bowl, in no particular order, and mix them together with a fork. Nothing could be simpler!"



DATE AND NUT LOAF

2 cups Self-Raising flour
½ cup chopped walnuts
½ cup – 1 cup chopped dates
1 cup milk
1 cup sugar
1 cup golden raisins
1 egg

Preheat the oven to 350F

Mix all ingredients together with a fork.

Spray 2 small loaf pans (7” x 3”) with nonstick spray.

Divide the mixture between them.

Bake in oven for 40 – 50 minutes – test for doneness with a toothpick.
