MAY RECIPE OF THE MONTH

May's recipe is for Lemon Squares - a tasty afternoon tea or anytime treat.


Lemon Squares



LEMON SQUARES

Quantities are to fill an 8" square pan - can be cut into 9 big squares or 16 smaller ones.

1 stick room temperature butter (1/2 cup)
1 cup all-purpose flour
1/4 cup confectioners' sugar
Pinch of salt
Zest of 1 lemon

LEMON TOPPING:
2 eggs
1 cup granulated sugar
1/4 tsp salt
Juice and zest of 1 lemon
1/4 cup flour
1/2 tsp baking powder

Preheat oven to 350*
Cream first five ingredients together, using either food processor or mixer.
When the mixture forms a ball, press the dough with your fingers onto the bottom of a lightly greased 8" square baking pan.
Bake 20 minutes.

While this is baking, prepare the topping:
Beat eggs well, gradually adding the sugar.
Slowly add the remaining ingredients, continuing to beat.

Reduce the oven to 325*
Pour the topping over the hot, baked bottom layer, and return to oven immediately.
Bake 30 - 35 minutes, until the top is light gold.

Remove the pan and run a sharp knife around the edges of the square.
Cool for about 20 minutes, cut into squares, remove from pan, sprinkle with confectioners sugar.
