JULY RECIPE OF THE MONTH

Orange Marmalade Cake comes to us courtesy of Sadie the Brit on the Web. It is a spicy cake which is delicious with a hot cup of tea! It can be made with other kinds of jams and jellies and called something like "Raspberry Jam Cake"

MARMALADE CAKE

Makes a 10 inch Bundt cake.

1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2/3 cup melted butter
2/3 cup sugar
3 eggs
1/3 cup milk
1 TBSP lemon juice
1/2 cup chopped walnuts
1/2 cup orange marmalade, or other jam or jelly

Preheat oven to 350*
Grease and flour a 10" Bundt pan.

Mix together the flour, baking powder, salt, cinnamon, nutmeg and cloves. Set aside.

In a medium bowl, mix together the sugar, melted butter, eggs, milk and lemon juice. Add dry ingredients to the egg mixture and mix until well blended.

Stir in the walnuts and marmalade.
Pour batter into prepared Bundt cake pan.

Bake 45 - 60 minutes, until cake springs back when lightly touched. Cool for 10 minutes in the pan before removing and cooling completely on a wire rack.
