OCTOBER RECIPE OF THE MONTH

Thanks to Joy, of Godolphin Chapter, for this tasty and easy supper dish. A hearty meat loaf, with a fruity tang.


East Indian Meat Loaf



EAST INDIAN MEAT LOAF

2 lbs ground chuck
2 tsp salt
1/4 tsp pepper
1/2 tsp curry powder
1/2 tsp garlic powder
2 eggs
1 small chopped onion
2 large apples, peeled and chopped
1/4 cup orange juice
1/3 mango chutney

Mix together all ingredients except chutney. Place in shallow baking pan, and chill about 1 hour.

Preheat oven to 350* and bake for 1 hour.

Spread top of loaf with chutney, and bake for a further 10 minutes.
