FEBRUARY RECIPE OF THE MONTH

For February's recipe, we have gone back to basics, with Yorkshire Pudding, the traditional British accompaniment to roast beef. Our thanks to Josie, from Guy Fawkes Chapter for this recipe.


Yorkshire Pudding



YORKSHIRE PUDDING



3/4 cup presifted flour
1/2 tsp salt
3 eggs
1/2 cup whole milk + 1/4 cup water OR 3/4 cup lowfat milk
1/2 cup beef drippings

Preheat oven to 450*

In a mixing bowl, beat the milk, eggs and salt until the surface bubbles.
Gradually beat in the flour a little at a time until the ingredients are incorporated.
Pour a little (about 2 -3 TBSP) of the hot beef drippings into muffin cups. The drippings must be very hot.
Pour the batter over the hot beef drippings, filling them 3/4 full.
Bake 20 minutes at 450*

This recipe will make 6 - 8.
