MAY RECIPE OF THE MONTH

The recipe for May was a big hit at our British Car Show Bake Sale. Lemon Curd Sugar Cookies combine the sweetness of the cookies and the tartness of the lemon curd to produce a tempting combination.


Lemon Curd cookies



LEMON CURD SUGAR COOKIES

2 cups flour
1/2 tsp baking powder
1/2 tsp salt
1 1/2 sticks unsalted butter
1 cup sugar
1 large egg
1/2 tsp vanilla

Whisk flour, baking powder, and salt together in a small bowl.
Whip butter and sugar together in large bowl until pale and fluffy.
Beat in the egg and vanilla at low speed.
Slowly add flour mixture until it is barely combined.
Separate into two balls, and flatten each into disk. Chill for four hours.

Preheat oven to 375*
Roll out the dough to slightly less than 1/4"

Cut as many cookies as possible. Bake the cookies 4 - 5 minutes, then switch the position of sheets. Continue to bake them for an additional 4 -5 minutes. Dredge in powdered sugar thwn set aside to cool. It is easier to have a large bowl of powdered sugar ready and just slide the cookies right off the sheet and into the sugar. Cool on cooling rack.

Pipe about 1/2 tsp lemon curd onto bottom of one of each pair of cookies, and sandwich the two together. Just before serving, sift some powdered sugar onto top of cookies.
