DECEMBER RECIPE OF THE MONTH

What could be simpler? Baked apples - not too sweet, with a hint of spice.


Baked Apples



BAKED APPLES

4 large apples (Granny Smith or any other not-too-sweet apple)
1 oz butter
1/4 C brown sugar
1/4 C raisins
1/2 tsp mixed spice **
3 TBSP water


**NOTE ABOUT MIXED SPICE: mixed spice is only found in British stores. I researched recipes online, and made a batch which I am keeping in a container in my spice cupboard. It is a very flexible recipe - if there are spices you don't like, leave them out, and if there are spices you like a lot, increase the amount! This is what I used:
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp mace
1/4 tsp coriander
Mix together well, and keep in an airtight container.

If you don't have this mixture on hand, just use a little cinnamon and add any other spices you may have.


Wash apples and remove cores. (If you have never cored an apple before: that is what the point at the end of the potato peeler is for. Insert the point alongside the core area, and work it around in a circular motion. You can either leave a little bit of core on the bottom - and then cut it off when you eat it - or you can cut a hole clear through the apple.) Score through the skin from top to bottom of the apples in two or three places.

Place in a shallow ovenproof dish.

Melt butter (easiest way is covered in the microwave) Stir in sugar, raisins and spice. Fill the centers of the apples. Pour water around the base of the apples.

Bake at 400* for about a hour.

These are WONDERFUL served covered in cream or custard.
